Penne with Braised Beef Ribs

The pictures just don't do this meal justice - they aren't bad, mind you, but they just don't highlight what a wonderful little dish this is.  Yes, it takes a little time, but it's so worth it, trust me.  This is the perfect Sunday afternoon dish to make... throw it on the stove, go do some laundry, watch a few episodes of Diners, Drive-ins, and Dives.. and the next thing you know, you are having amazing dinner!

Penne with Braised Beef Ribs

Ingredients:
1 Tablespoon vegetable oil
1/2 sweet onion, chopped
1 lb boneless beef country style ribs
salt and pepper
1 cup beef broth
1/4 cup red wine
28oz can crushed tomatoes
2 teaspoons parsley
2 teaspoons dried oregano
2 garlic cloves, finely minced
1/4 teaspoon granulated sugar
12oz whole grain penne pasta

Directions:
Preheat oven to 350 degrees F.

In a Dutch oven, heat the oil over medium heat.  Sear the meat on all sides.  Remove and add the onions.  Cook for 2-3 minutes; stirring occasionally.  Add the meat back into the pot along with the beef broth and wine.  Cover and place in oven.  Bake for 1 hour.  Lower temperature to 325 degrees F and continuing cooking for 1 hour.

Remove meat from the Dutch oven and skim off any excess fat.  With a submersion hand mixer, carefully puree what is left in the Dutch oven.  Place over medium heat and ad the crushed tomatoes, parsley, oregano, garlic, and sugar.  Stir to combine.  Add the meat and stir to coat.  Bring to a boil, reduce heat, and simmer for 30 minutes.

Meanwhile, cook the pasta according to package directions; drain.  Serve the sauce over the pasta and enjoy!

OMG! This sounds SO good! I might just have to make it tonight! Thanks to you, I now have a submersion hand mixer to fix it with! Your Dad will be SO happy that I now have another pasta recipe. I'll be sure to give you ALL the credit! Love ya!

oh my, that's what I get for reading too quickly. I had to re-read the recipe three times to actually understand the directions. I was trying to figure out why on earth you were pureeing perfectly good meat! ha ha ha. This NOW sounds awesome. I'm never done any type of ribs with pasta. I bet it's great that way.

Red wine and tomato sauce braise, enough said!! This dish is guaranteed to be delicious with red wine and tomato braised beef in it. I just saw short ribs on sale at the store too...hmm...might have to go back & grab some to make this. My husband would die from sheer delight!!

Later that same day....Since it was snowing, I decided to get some ribs & make this for tonight. To give you some idea on how good this is: your Dad said, "Tell Jenn she hit a home run with this one!" Absolutely the highest compliment he could pay a pasta dish - and, of course, you! We loved it & are already fighting over who will get the leftovers!!

That chunk of beef looks so tender, I guess that would be the expectation with hours of braising though, right?
