Hummus Topped Tilapia

I have a secret:  I put hummus on top of tilapia and Chris LOVED it!!  Sometimes, if you don't tell your picky eaters what's on the plate, they find that they love things they never thought they would love!  It's sort of like when I was growing up and my parents took us to a Rocky Mountain Oyster feed. I had no idea what I was eating, but I loved it!  Ok, I loved it until my dad whispered "you're eating cows balls" in my ear....then I pretend I did like them, but honestly, I loved them.  I couldn't wait for the next time we had them!! lol

This is a very simple and healthy week night meal.  If you really felt inclined, you could make your own hummus, but I'm not ashamed to admit that I used store bought.  It was convenient and it was perfect!

Ingredients:
4 tilapia fillets
1-2 Tablespoons red pepper hummus (or any flavor you want - the amount you use is up to you, depends on how thick you want the layer of hummus to be)
3 Tablespoons panko
salt and pepper

Directions:
Preheat oven to 400 degrees F.  Spray a baking dish with non-stick spray.  Rinse the fish, pat dry with paper towel, and place in prepared dish.  Spread an even amount of hummus on top of each piece of fish.  Sprinkle with panko and season with salt and pepper.  Bake for 12-14 minutes or until the fish flakes easily with a fork.  Enjoy!

Wow, you ate RM oysters! You continue to surprise and impress me. I have made them at home. And hummus, and Chris ate it. I don't think I'll be able to sleep all day!

I like fish and I like red pepper hummus, but would have never thought of this. My cooking is very limited by my mind.

My hubby has eaten RM oysters, he said they're chewy. I say ew LOL! Now hummus on fish, that's a new one to me and I say HOORAY! I bet even I'd like this one, however I am a HUGE fan of hummus :) Great idea Jenn!

Well, if you posted a ball recipe, I'm not sure I could attempt it myself, but this one does look delicious! Never thought to cook with hummus (which we tell the kids is garlic dip). Can't wait to try this on fish next.

I ate a ball (goat's) once by accident. It was in a stew type of thing. Quite nice actually. I like hummus, so I'm sure it's delish with fish.

I grew up eating rm oysters too... I don't know if I could stomach them now that I know what they are. Adding hummus to the coating on the fish is a fantastic idea.

You beat me to it! I've been meaning to bake some fish with hummus spread on it, but haven't gotten around to it yet. Oh, it looks fabulous! Gotta catch up to you now ... :)

Cow balls!!! Ha ha ha! Were they fried? Because my mom has always said a dirty dish towel would taste good fried...with salt anyway. Okay so how's the new position going, fellow ad friend? Sorry I was mia last week - we had a pitch and it was LOTS of late nights in a row! Love the idea of the hummus with fish...and panko. Pure delicioso...

I was looking for tilapia recipes and came to yours because i am a fellow Jen! Im pairing it with plantain chips which are DIVINE with hummus and i needed a fish dish (ha!) to add some protein to the mix.

I normally don't try anything new I had never had Hummus before I tried this and I honestly LOVED it. This is by far the best tilapia recipe I've tried. I am going to try the same recipe with a bit of lemon juice the next time I make it I feel it would really give it a very mild kick to it.
