Peruvian Grilled Chicken

While preparing for our big move, I have tried to keep dinners simple - Ok, as most of you know, I try to do that all the time, but the last two weeks have been even more on the simple side each and every night.  Some dinners aren't post worthy, but that's ok, you have to have a few of those every now and then, right?  But this one.. this one is definitely worth posting.  It's simple and full of flavor - my favorite type of meal!

And, just in case you are not aware (because, trust me, I was not) Peruvian cuisine reflects local cooking practices, ingredients, and through immigration influences from Spain, China, Italy, West Africa, and Japan.  A big mix there to equal amazing flavors!

Peruvian Grilled Chicken

Ingredients:
2 boneless, skinless chicken breasts
1/4 cup soy sauce
2 Tablespoons lime juice
1 Tablespoon vegetable oil
2 cloves of garlic, minced or crushed
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon dried oregano

Directions:
Rinse chicken and pat dry with paper towel.  In a measuring cup, add the remaining ingredients and stir to combine.  Place the chicken in a resealable bag and pour the marinade over the chicken.  Seal and refrigerate for at least 2 hours, preferably 4.

Preheat grill to 375 degrees and oil grill grates.  Remove the chicken from the bag and discard the marinade.  Place the chicken directly over the fire and grill for 6-10 minutes per side depending on how thick your pieces are.  Chicken is done when internal temperature reaches 165 degrees.  Remove from grill and allow to rest for 3 minutes before serving.  Enjoy!

LOVE all those flavors together. I had no idea what influences were involved with Peruvian cooking.

Good luck with the move. I'm not envying that kind of fun at all. We moved this past spring and I have exactly zero desire to repeat that anytime soon! When is the big day?

Soy sauce, lime and garlic make an awesome marinade, then adding in those yummy spices, well YUM! I love this recipe Jenn!!!! Sound delicious and easy, 2 things I love :)

I am feeling your pain - moving is such a nightmare but once you get settled into your new home, it will all be worth it!

Best wishes your move! I had no idea that Peruvian food would include this combination of flavors. They are some of my favorites! The chicken looks absolutely perfect. Yum!

Do you have any Bolivian chicken? Just kidding. I lived in Bolivia for a year when I was a kid. This looks amazing. I will wear my Andean llama poncho while eating it. :-)

I have a Peruvian friend who makes great food from ceviche and the classic Papas à la Huancaina. The cuisine as you mention touches a bit every culture.
