Asian Sloppy Joes

When I saw this recipe posted on Bo's Bowl, I instantly knew I was going to make it.  I mean, come on.. Asian flavors.... you know I'm all about that!  And sloppy joes?  Well, I'll let you in on a little secret:  I LOVE sloppy joes.  I'm not even ashamed to admit that it doesn't even have to be homemade, I'll eat Manwich if it's put in front of me... I don't know what it is about loose meat sandwiches, but they are one of my favorites.

Ok, enough about me, let's talk about these Asian Sloppy Joes - They were incredible!  It was a perfect little twist on the classic sandwich.  Next time, I might make them a bit more on the spicier side... maybe add a bit of Sriracha to it, but otherwise, I wouldn't change a thing.  I served this with a some Sriracha coleslaw and it was the perfect dinner for a busy week night!

Asian Sloppy Joes
Adapted from Bo's Bowl

Ingredients:
1 teaspoon vegetable oil
1/2 sweet onion, finely chopped
1 jalapeno, chopped (for less heat, remove the seeds and membranes)
1 red bell pepper, chopped
1/2 lb ground beef
1/2 lb ground pork
1 Tablespoon sambal oelek
1/2 cup roma tomatoes, chopped
1/4 cup hoisin sauce
salt and pepper
4 hamburger buns

Directions:
In a large, deep non-stick skillet, heat the oil over medium heat.  Add the onions and saute until softened, about 5-8 minutes.  Add the jalapeno and red pepper and saute another 5 minutes.  Add the beef and the pork, breaking it up with a wooden spoon.  Let meat brown, about 5-8 minutes.  Add the hoisin, stirring to combine.  Add the tomatoes and season with salt and pepper.  Bring the mixture to a slow simmer and cook for about 15-20 minutes or until the sauce has thickened up a bit.  Taste and adjust seasoning if necessary.  Serve on hamburger buns.  Enjoy!

    ps You guys sure do eat a lot of tater tots...I love them, but never think to cook them...I'm picking up a bag next time I'm at the store.
