Pepper Jack Mac N Cheese with Bacon and Chicken

Hmmmmmmm..... Let's see here - chicken, pepper jack cheese AND bacon?  What's not to love about this dish?  It's got everything - dairy, grains, vegetables, proteins, fats... I mean the only thing missing is the fruit.....  You can get that from your dessert :)  Who knew a well balanced meal could come from a bowl of mac and cheese??

Although, this would be good baked with a nice crunchy topping, this is a very simple way to get a great mac and cheese on the table in less than 30 minutes.  It's creamy, it's smooth, and it's sure to be a crowd pleaser!!

Just a quick note about comments.. I have no removed the word verification - I didn't get a single comment yesterday after I turned it on - I'm going to try moderating my comments and see if that works any better.  Sorry for the inconvenience, but this spam stuff is pushing me close to not wanting to blog anymore!! It's sooo frustrating!!

Pepper Jack Mac N Cheese with Bacon and Chicken

Ingredients:
1 large chicken breast, cooked and cut into bite size pieces
10 mini sweet peppers, roughly chopped
1 Serrano pepper (or jalapeno), finely chopped
5 strips of bacon, cooked crisp and crumbled
2 cups elbow macaroni
2 eggs
5 oz evaporated milk
1 teaspoon hot sauce (I used Frank's Hot Sauce)
1 teaspoon salt
1/4 teaspoon pepper
3/4 teaspoon dry mustard
2 cups shredded pepper jack cheese

Directions:
Cook pasta according to package directions; drain and put back in pot.

In a large measuring cup or bowl, mix together the egg, evaporated milk, hot sauce, salt, pepper and dry mustard until well combined.  Place the pot of pasta back on low and slowly pour the mixture into the pasta, stirring to coat.  Add the cheese 1 cup at a time and stir until cheese has melted.  Add the chicken, sweet peppers, serrano, and bacon.  Stir to combine.  Allow to cook another minute or two, or until everything is heated through.  Remove from heat and serve.  Enjoy!

  1. Now THIS is what I'm talking about. Stunning stuff!!! I must follow your recipe because last time I made MnC although it was yummy it was too thick. Yours looks perfect. By the way, when I took my word verification off I got bucketload of spam for the first month or two but they've since almost entirely stopped. Blogger filters them anyway so they never appear in your comments. It's worth the perseverance. Xx

  4. Drag about SPAM! The mac & cheese looks great Jenn. I never though to use pepper jack cheese. My husband and sister would go ape for this! I'm going to make it and surprise them one of these days soon.

  6. Oh my goodness. That is comfort food at its best. I only eat comfort food on Friday nights. So maybe tomorrow, but without the bacon. Something about those nitrates that kills me. Looks delicious!

  8. First of all, that looks beyond amazingly fabulous!!! And you sure need the comfort food, 'cause that spam will stress you out. I check my comments before they post; but the spam has gone through the roof both in the spam folder itself and even sneaking through into the regular folder! Thank goodness I have to approve comments first, but it's just absurd ....

  11. I've never put peppers in mac & cheese - great must try idea. I'm sorry, but don't understand the spam problem. About once a month I go to the appropriate place and click delete all and they all go away, but perhaps yours is different.

  15. Mmmm, Jenn, you've come up with another winner! Who wouldn't love this! I absolutely hate word verification, so when I started blogging I decided on comment moderation. I love it. I wish the spammers would go away - I get a ton of spam in my spam folder and I always wonder why they bother since I have comment moderation! Do they really think I'm going to publish their spam?!

  17. Kapoww!!!! Stumbled and pinned this one, what a great dish. I noticed this week that the word verification on people's blogs got much more difficult, almost impossible to read and I had to often try two or three attempts.

    I only use moderation and that works fine. I have blogger set to notify me by email of each incoming comment. I have noticed that about 75% of the spam comments that come in are now caught and sent to the "spam comment" section so Blogger is getting better on that.
