Chicken and Goat Cheese Pasta

I adore goat cheese.  I could eat it all day, every day.  I love it on pizza, on sandwiches, on crackers, on meat, in meat... the list goes on and on.  So, it was no wonder I created a pasta recipe using it.  I think you all know my love for pasta at this point, so it just seemed like the logical thing to do. :)

Chicken and Goat Cheese Pasta

Ingredients:
1 teaspoon olive oil
3/4 lbs chicken tenders, cut into bite size chunks
1 red pepper, thinly sliced
2 garlic cloves, minced
1 teaspoon Italian herb mix
1/2 teaspoon red pepper flakes
3 oz goat cheese
1/4 - 1/2 cup white wine or chicken broth
12 oz penne pasta
salt and pepper

Directions:
Cook pasta according to package directions.  Drain, reserving 1/2 cup of the pasta water.

Meanwhile, heat the oil in a skillet over medium heat.  Add the chicken and cook until no longer pink, about 5-8 minutes.  Add the pepper and cook another 3 minutes, stirring occasionally.  Add the garlic and cook 1 minute.  Stir in the Italian herb mix, pepper flakes, and white wine/chicken broth.  Let everything simmer for 2-3 minutes and then stir in the goat cheese.  Toss in drained pasta.  If the pasta is to dry, stir in pasta water, a little at a time.  Season to taste with salt and pepper.  Serve and enjoy!

  1. I have some leftover goat cheese in my fridge from our pizzas this weekend so I told my husband I would make something with it this week. This sounds wonderful - I love goat cheese over pasta....and the red peppers are perfect here, too!

  2. Actually, I don't think I've ever eaten goat cheese. How can I be from Wisconsin and admit that?? I've got to try this. Looks like a perfect Friday night comfort food dish!

  4. Goat cheese and I are not the best of friends. I can only tolerate it in the very very smallest of amounts. That's ok though, because it just leaves more for you, right?

    P.S. I love everything else about this pasta though. I'll just have to sub in a different cheese. :P
